Happy Holidays! It’s the time of year where we seek comfort in tradition. Including when we eat.

busy day today, we had to go out for breakfast and run a few errands. Finally afternoon settled upon us and I’m faced with the eternally annoying question of what to do for dinner? Well up here in New England it’s cold, the kids are playing pond hockey already. So I need something quick and easy bc after weeks of preparation for Christmas. I’m tired and don’t really feel like doing anything.

so yesterday I shopped some ingredients for soups I was planning to make over Holiday break. I have everything on hand

I chopped some onion and celery and let that cook in a frying pan until softened then I scooped them into a stock pot with chicken broth/stock to which, I added some white meat chicken I like Tyson’s fully cooked grilled chicken strips from my freezer (you can find it at Walmart) and it’s very convenient when your recipe calls for chicken and you want simple I just warm the strips in a pan and dice them then add to stock pot with veggies. Then add pastina and Manichewitz, very fine egg noodles I also add fresh thyme & a bay leaf. I also add salt to taste. If the soup thickens up add more chicken stock.A half hour later I have delicious homemade chicken noodle soup.
